Save A Fortune Promotion

In our area the market is very soft, so nearly every community is offering free rent right off the bat. In order to make it more interesting, I had fortune cookies custom made. Every cookie has a fortune that can save them money, anything from a free application fee to a free month rent. I call the promotion “Save A Fortune.” I’ve found that making a game out of it has proven to be very successful as they feel they are lucky, rather than just handing it out from the get-go.

IF IT’S NOT IN YOUR BUDGET to buy fortune cookies, make them with your personal fortunes inside. (“There are large closets in your future!”)
Dip in chocolate (dark, milk or white) with sprinkles. Or put them on chopsticks. Use red and white sprinkles for Valentine’s Day, green and white sprinkles for St. Patrick’s day, red, white and blue sprinkles for Memorial Day/Fourth of July, etc.
MAKE YOUR OWN FORTUNE COOKIES
INGREDIENTS:
3 egg whites
3/4 cup white sugar
1/2 cup butter, melted and cooled
1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
1 cup all-purpose flour
2 tablespoons water
DIRECTIONS:
1. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets, or line with parchment paper. Have fortunes ready to go on small strips of paper.
2. In a large glass or metal bowl, whip egg whites and sugar on high speed of an electric mixer until frothy, about 2 minutes. Reduce speed to low, and stir in melted butter, vanilla, almond extract, water and flour, mixing well. Consistency should resemble pancake batter. Spoon the batter into 3 inch circles on the prepared baking sheets. Leave room between for the cookies to spread while baking.
3. Bake for 5 to 7 minutes in the preheated oven, or until the edges begin to brown slightly. Quickly remove one at a time, place a message in the center, and fold in half. Fold the ends of the half together into a horseshoe shape. If they spring open, place them in a muffin tin to cool until set. You have to move quickly, so only bake a few cookies at a time so you can practice adding the fortunes inside.
